After the primary fermentation, more juice will need to be extracted from the fruit. It should be noted that the juice that is extracted in this step is typically not as high of a quality as the juice that is extracted during the crushing phase. The juice got from the first crushing did not come in contact with the stem and skins as it ran freely. But the press juice is not worthless. Large scale wineries always make use of the press juice to increase their total product volume.

After the pressing, the wine undergoes a secondary fermentation and an aging process simultaneously. You can choose how much to ferment your wine as you are the wine maker.

The final stage of wine making is bottling. Wine can be directly added into bottles but you may need to add some sulfites so that the fermentation process can come to an end which will also act as a preservative for the wine. Finally, the bottle of wine is sealed with a cork.
